Triple Chocolate Chip Cookies
THE INGREDIENTS
- 280g Plain Flour
- 75g Unsweetened cocoa powder
- 1 tsp Baking soda
- ¾ tsp salt
- 225g Unsalted butter, room temp.
- 200g Caster sugar
- 200g Brown sugar
- 2 Large eggs, room temp.
- 1.5 tsp Vanilla extract
- 120g Milk chocolate chips
- 120g Dark chocolate chips
- 120g White chocolate chips
INSTRUCTIONS
- Preheat BBQ to 200 degrees, indirect heat and line your tray with baking paper
- In a medium bowl, whisk together the flour, cocoa, baking soda and salt. Set aside
- In a stand mixer fitted with the paddle attachment, combine the butter and both sugars. Mix until smooth.
- Add the eggs, one at a time, mixing well after each addition. Add the vanilla and mix until combined.
- Gradually add the flour mixture and beat on low speed until just combined. Add in the chocolate chips with the last addition of flour until just combined (May need to use a spatula to make sure everything is evenly mixed through)
- Weigh each cookie before placing on tray. (I made 40g balls and placed 6 evenly spaced on a 30×20 baking tray)
- Bake in BBQ for 10-14 minutes or until evenly spread, turning tray halfway through.
Note: Makes approx. 16x 40g cookies
