Smoked Sausages in the Kettle
THE INGREDIENTS
- Sausages (roughly 1kg)
- Smoking wood chunk
INSTRUCTIONS
- Set up kettle for vortex or indirect cooking by setting up charcoal baskets in the middle of the Kettle.
- Startup coals using charcoal chimney. Once coals are red hot dump into charcoal baskets and close lid allowing kettle to Preheat for 15 mins.
- Once preheated place sausages on the outer part of the kettle and sit a smoking wood chunk on grill on top of charcoal grates.
- Cook sausages for 30 mins turning the halfway through to ensure an even cook and colour.
- Sausages are ready when they hit 165°F or 75°C
