Smoked N Loaded Wedges
THE INGREDIENTS
- 10 brushed potatoes
- Rub of choice
- Green onions
- 10 bacon rashers
- Sour cream
- Shredded cheese of choice
INSTRUCTIONS
- Bake your potatoes. Preheat your smoker to 275 degrees F. Drizzle your clean potatoes with olive oil and season on all sides with rub of choice. Place the potatoes on the smoker grates, close the lid, and smoke for approximately 45 minutes, or until the potatoes are tender and cooked to an internal temperature of about 210 degrees F.
- Smoke Bacon – Smoke bacon rashers until cooked and crispy. Then chop up into pieces
- Load Potatoes. Remove the baked potatoes from the smoker and place in BBQ tray. Cover with cheese and place back in smoker until cheese is melted.
- Remove Potatoes and load with chopped onions and bacon, serve with side of sour cream.
