Smoked Meat & Cheese BBq Balls

THE INGREDIENTS

  • 500g Beef mince
  • 1/3 Red onion diced
  • 1½ Tsps minced garlic
  • 1/4 Cup fresh parsley
  • Dry rub of choice OR 1 tsp of salt
  • 1/2 Tsp chilli flakes
  • 1/2 Tsp oregano
  • Pepper to taste
  • 4 mozzarella cheese sticks cut into roughly line pieces
The rubs / sauce used in this cook are:

KC Butt Spice Rub

Suckle Buster Honey BBQ Glaze

INSTRUCTIONS

  1. Set smoker to 250°f (120°c) and let it preheat for 15 mins.
  2. Mix beef mince, garlic, onion and parsley in bowl with rub of choice (we used KC Butt Spice Rub).
  3. Form beef mixture into balls. Press small indent and place cheese in fold. Then form meatball again so you have the meat around the cheese.
  4. Smoke balls for 45 mins to 1 hour or until internal temp of 165°f (70°c).
  5. Remove and baste with bbq sauce on tray (we used Suckle Buster Honey BBQ Glaze).
  6. Smoke for 10mins
  7. Remove from smoker and enjoy.
