Smoked Meat & Cheese BBq Balls

THE INGREDIENTS
- 500g Beef mince
- 1/3 Red onion diced
- 1½ Tsps minced garlic
- 1/4 Cup fresh parsley
- Dry rub of choice OR 1 tsp of salt
- 1/2 Tsp chilli flakes
- 1/2 Tsp oregano
- Pepper to taste
- 4 mozzarella cheese sticks cut into roughly line pieces

INSTRUCTIONS
- Set smoker to 250°f (120°c) and let it preheat for 15 mins.
- Mix beef mince, garlic, onion and parsley in bowl with rub of choice (we used KC Butt Spice Rub).
- Form beef mixture into balls. Press small indent and place cheese in fold. Then form meatball again so you have the meat around the cheese.
- Smoke balls for 45 mins to 1 hour or until internal temp of 165°f (70°c).
- Remove and baste with bbq sauce on tray (we used Suckle Buster Honey BBQ Glaze).
- Smoke for 10mins
- Remove from smoker and enjoy.
