Prosciutto Wrapped Smoked Brie

THE INGREDIENTS

  • Large slice or Wheel of Brie or Camembert cheese (125g to 500g)
  • Thinly sliced Prosciutto (enough slices to wrap the portion of cheese completely)
  • Smoked honey (or your favorite sweet glaze/syrup)

INSTRUCTIONS

  1. Pre-heat your smoker to between 250f and 275f (120c to 135c).
  2. Wrap your cheese of choice with the thin slices of prosciutto, ensuring the cheese is completely covered.
  3. Place cheese into the smoker. You may choose to use a stainless steel grill plate or pizza tray to ensure easy removal from the smoker later.
  4. Smoke for approximately 20-30 mins. Regularly check on the cheese, as it will start to “puff up”, this indicates that it is almost done. You need to ensure it is removed from the smoker before the cheese “pops”.
  5. Generously drizzle with honey or you chosen glaze.
  6. Serve with your favourite cracker or crisp bread.
