Lamb Skewers

THE INGREDIENTS

  • 1kg – 2kg lamb rump
  • salt
  • black pepper
  • white pepper
  • Oregano
  • 250ml red wine.
 

INSTRUCTIONS

  1. Pre soak bamboo skewers i water for at least 3 hours.
  2. Prepare rub by mixing 3 tablespoons salt, 2 tablespoons oregano, 1/2 tablespoon white pepper and 1/2 tablespoon black pepper. (Note not all the rub needs to be used when marinating. Amount used it up to you)
  3. Cut lamb into 3cm cubes.
  4. Marinate lamb by adding wine and lamb into mixing bowl and then adding rub and continually mixing. Repeat this step a couple of times depending on how much rub you want to add.
  5. Let lamb marinate for minimum 2 hours. Ideally 24-30 hours is best so the lamb can soak up the wine.
  6. Remove lamb from fridge and proceed to skewer cubes onto bamboo skewers.
  7. Pre heat BBQ
  8. Cook on BBQ turning skewers every couple minutes for even cook and until medium rare.
  9. Serve as open plate with greek salad or wrap in pita bread and serve as a souvlaki.
