Dorito Crumbed Buttermilk Chicken

THE INGREDIENTS

  • 500g Chicken Nibbles
  • 250ml Buttermilk
  • 170g Nacho Cheese Doritos, coarsely chopped
  • 1 egg Whisked
  • 50g Plain Flour
  • Serve with your favourite sauce, mayo or salsa
 

INSTRUCTIONS

  • Place the chicken into a glass or ceramic bowl. Cover chicken with the buttermilk. Cover and then refrigerate for 2-4 hours or even overnight.
  • Put the Corn Chips, flour and whisked egg onto three separate plates or shallow containers.
  • Drain the chicken and discard the buttermilk.
  • Roll the chicken in the flour, shaking to remove excess.
  • Dip the floured chicken into the whisked egg to coat all over
  • Press the chicken into the corn chips, make sure you get a good coating.
  • Preheat your SmokeFire to 160C.
  • Place crumbed chicken directly onto racks.
  • Cook for approximately 20 minutes or until golden in colour, check the internal temperature of the chicken, it should be a minimum of 74C for chick to be cooked.
