Dealsy’s Smoked Sticky Date Puddings
THE INGREDIENTS
Makes 6 – 8 puddings
PUDDING:
- 200 g pitted dates, finely chopped
- 3/4 cup water (200ml)
- 1 level teaspoon bicarbonate of soda
- 60 g butter, softened
- 160 g light brown sugar
- 2 eggs
- 200 g self-raising flour
CARAMEL SAUCE:
- 300 ml pure cream
- 1/2 cup brown sugar
- 80 g butter
OPTIONAL:
Dollop Cream and/or Vanilla Ice Cream to serve
INSTRUCTIONS
- Place dates in a heat proof bowl and sprinkle over bicarb, add water and cover bowl with a plate or gladwrap.
- Beat butter and sugar together with Silicone Whisk until creamy.
- Add eggs one at a time, beating well between additions.
- Add flour and whisk to combine.
- Add date mixture, stirring very well to completely combine.
- Pour mixture evenly into 6 x 1-Cup Muffins and place in steamer.
- Cover and steam for 20-25 minutes or until cooked.
SAUCE:
- Combine all sauce ingredients in saucepan.
- Stir well and bring to the boil. Cook for 2 minutes.
- Serve with warm puddings and ice-cream or cream.
