Grilled salmon & Garlic Mash

THE INGREDIENTS

  • salmon
  • salt
  • pepper

Garlic Mash Ingredients

  • 4-6 potatoes
  • 4-6 garlic bulbs ( can be substituted with garlic mince 2 teapsoons.)
  • salt
  • oil
  • vinegar
 
 

INSTRUCTIONS

  1. Pre heat bbq
  2. Salt and pepper salmon on both sides
  3. Add salmon to bbq and leave for 6-8 minutes or until skin is cooked
  4. Flip salmon and grill for another 4-6 minutes or until cooked.

Garlic Mash

  1. wash and cut potatoes into 4s
  2. add potatoes to water with a pinch of salt
  3. bring potatoes to a boil or until soft.
  4. strain potatoes
  5. start mashing potatoes – once potatoes are mashed start adding oil and mixing with a fork until a mash becomes a soft smooth consistency.
  6. add 3 table spoons vinergar and mix
  7. using mortar and pestle smash garlic up releasing oils of garlic. Continue until garlic is minced consistency and add to mash and mix. Depending on how much garlic flavour you want more garlic can be added. If consistency becomes lumpy and hard mix in more olive oil.
