THE INGREDIENTS

  • 1 x Whole Chicken – 1.8Kg or larger
  • Vegetable Oil
  • 1 x Can of your Favourite Beer – or Wine or Juice if you prefer
  • Your Favourite Poultry Rub
  • Weber Deluxe Poultry Roaster

INSTRUCTIONS

  1. Remove and discard the neck, giblets, and any excess fat from the chicken. Rinse the chicken, inside and out, under cold water and pat dry with paper towels. Lightly coat the outside of the chicken all over with the vegetable oil and then coat with your favourite rub.
  2. Open the beer can and pour off half of the beer into a glass (for you to drink whilst the chicken cooks) then pour the rest of the beer into the middle cavity of a Weber Deluxe Poultry Roaster then cover with the 4 prong cap. Place the chicken, bottom first over the 4 prongs on the Weber Deluxe Poultry Roaster, place the small cap into the neck of the chicken to lock in the steam when cooking.
  3. Touch up the chicken with extra rub if required.
  4. Pre heat your BBQ – doesn’t matter if it is Charcoal, SmokeFire or Gas BBQ – to 180c
  5. BBQ over In-direct heat, using the Weber Digital Thermometer, until the internal temperature reaches 74ºC in the breast and in the thickest part of the thigh, 1 1/4 to 1 1/2 hours. Wearing barbecue mitts, carefully remove the chicken, being careful not to spill the beer-it will be hot. Let the chicken rest for about 10 minutes before lifting it from the Weber Deluxe Poultry Roaster. Use the juices collected in the pan of the Weber Deluxe Poultry Roaster to add to your gravy to boost the flavour – you can also use the remaining beer from the Weber Deluxe Poultry Roaster in your gravy too. Cut the chicken into serving pieces. Serve warm.
