Dorito Crumbed Buttermilk Chicken

THE INGREDIENTS
- 500g Chicken Nibbles
- 250ml Buttermilk
- 170g Nacho Cheese Doritos, coarsely chopped
- 1 egg Whisked
- 50g Plain Flour
- Serve with your favourite sauce, mayo or salsa
INSTRUCTIONS
- Place the chicken into a glass or ceramic bowl. Cover chicken with the buttermilk. Cover and then refrigerate for 2-4 hours or even overnight.
- Put the Corn Chips, flour and whisked egg onto three separate plates or shallow containers.
- Drain the chicken and discard the buttermilk.
- Roll the chicken in the flour, shaking to remove excess.
- Dip the floured chicken into the whisked egg to coat all over
- Press the chicken into the corn chips, make sure you get a good coating.
- Preheat your SmokeFire to 160C.
- Place crumbed chicken directly onto racks.
- Cook for approximately 20 minutes or until golden in colour, check the internal temperature of the chicken, it should be a minimum of 74C for chick to be cooked.
