Shot Glass Burgers (makes 12)

THE INGREDIENTS
- 600g Mince
- 200g Mozzarella Cheese cut into 1cm cubes
- 200g Grated Cheese
- 2 Brown Onions, finely chopped
- Nob of butter or Oil
- 4 Bacon Rashes
- 1/2 tsp Salt
- 1/2 tsp Ground Pepper
- Your favourite BBQ Sauce
- Shot Glass
INSTRUCTIONS
- Place mine, salt and pepper into a mixing bowl and combine well.
- Portion mince into 50g balls.
- Push shot glass into centre of mince ball, forming around base of shot glass to form a pocket, remove shot glass which should leave you with a small mince cup.
- Place mince cups onto a tray and place in fridge to chill.
- Put a small amount of butter or oil and finely chopped onions into a small saucepan, cook onions on a medium heat until onions are caramelised to you liking, remove from heat and put aside to cool.
- Cooke bacon in a frying pan or bake in the oven until crispy, let cool and then finely chop.
- Grab your mince cups from the fridge, add a small amount of caramelised onion to the mince cup, then add a cube of mozzarella, add a small amount of your favourite BBQ sauce, top with grated cheese and then a small amount of bacon crumbs on top.
- Preheat you SmokeFire to 160c.
- Put filled burgers into your SmokeFire and cook for 15-20 minutes.
