Stuffed Capsicums

THE INGREDIENTS

Serving 6

  • 3 Capsicums – all the same size
  • 300g feta cheese
  • 300g cherry tomatoes
  • 130g spring onions
  • 20g chives
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • half a clove of garlic, crushed
  • salt, pepper, chili flakes
  • shredded cheese of choice
 

INSTRUCTIONS

  1. Preheat BBQ to low-medium heat.
  2. Cube feta, tomatoes, onions and put them in a bowl.
  3. Season with soy sauce, olive oil and spices, Mix well.
  4. Scoop out the washed and halved capsicum insides.
  5. Stuff them and sprinkle shredded cheese on top.
  6. Put on an aluminium tray and close the grill’s lid.
  7. Broil for 25-30 minutes.
  8. Check frequently to make sure the edges don’t burn.
    Tip: Add minced meat to use it as a main dish.
