Smoked Christmas Puddings
THE INGREDIENTS
200 g mixed dried fruit
100 ml brandy
100 ml fresh orange juice
60 g butter
160 brown sugar
2 eggs
200 g self raising flour
2 tsp mixed spice
Brandy Cream
- 250 ml cream
- 1 tbsp icing sugar
- 2 tbsp brandy
INSTRUCTIONS
Heat you smoker to 150c/300f using Apple Wood or Cherrie Wood chunks for flavour
Place the mixed fruit in a large bowl.
Place the brandy and orange juice in a small saucepan over low heat. Cook for 2 mins or until heated through. Pour over the fruit and stir to combine. Set aside for 30 mins to soak.
Beat butter and sugar together until pale and creamy.
Add Eggs, one at a time, beating well between additions.
Add flour and mixed spice and whisk to combine.
Add fruit mixture and stir until combined.
Pour evenly into muffin pans.
Cook for approx. 20 mins until cooked through – test with a wooden skewer to probe and should come out clean
Dust with icing sugar and service with Brandy Cream
Brandy Cream:
Use electric beaters to whisk together the cream and icing sugar until soft peaks form. Add the brandy and stir to combine.
