Lamb spareribs in the Kettle

THE INGREDIENTS

  • 1.2 kgs lamb spareribs
  • 2 table spoons Chinese 5 spice.
  • 1 tablespoon Soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon chilli flakes
  • 1 teaspoon minced garlic
  • 1 teaspoon lemon grass mince
 

INSTRUCTIONS

  1. Set up kettle for vortex or indirect cooking by setting up charcoal baskets in the middle of the Kettle.
  2. Start up coals using charcoal chimney. Once coals are red hot dump into charcoal baskets and close lid allowing kettle to Preheat for 15 mins.
  3. While kettle is preheating prepare lamb ribs by combining ingredients and ensuring to mix to get even coat on ribs.
  4. Place ribs on the outer part of the kettle and sit a smoking wood chunk on grill on top of charcoal grates.
  5. Cook ribs for 45 mins ensuring to turn lid every 15 minutes to ensure an even cook.
  6. Remove and let rest for 5 mins then serve.
