Lamb spareribs in the Kettle
THE INGREDIENTS
- 1.2 kgs lamb spareribs
- 2 table spoons Chinese 5 spice.
- 1 tablespoon Soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon chilli flakes
- 1 teaspoon minced garlic
- 1 teaspoon lemon grass mince
INSTRUCTIONS
- Set up kettle for vortex or indirect cooking by setting up charcoal baskets in the middle of the Kettle.
- Start up coals using charcoal chimney. Once coals are red hot dump into charcoal baskets and close lid allowing kettle to Preheat for 15 mins.
- While kettle is preheating prepare lamb ribs by combining ingredients and ensuring to mix to get even coat on ribs.
- Place ribs on the outer part of the kettle and sit a smoking wood chunk on grill on top of charcoal grates.
- Cook ribs for 45 mins ensuring to turn lid every 15 minutes to ensure an even cook.
- Remove and let rest for 5 mins then serve.
